Marbella<\/a>Le nouveau restaurant Nikkei de est Kena by Akiro, qui a ouvert sur le toit d'El Fuerte Marbella le 3 juillet. C'est l'\u0153uvre du chef Luis Ar\u00e9valo, largement reconnu comme le chef qui a apport\u00e9 la cuisine Nikkei \u2014 la fusion japonaise-p\u00e9ruvienne \u2014 en Espagne. Je suis all\u00e9 avec un groupe de six personnes lundi dernier pour voir ce qui en \u00e9tait.<\/p>\n

Une place au bord de l'eau<\/h2>\n

La premi\u00e8re chose qui vous frappe est le cadre. El Fuerte se situe pr\u00e9cis\u00e9ment o\u00f9 l'ancienne ville rencontre la plage, et depuis la terrasse du septi\u00e8me \u00e9tage, la M\u00e9diterran\u00e9e remplit tout votre champ de vision. Il n'y a pas de route entre vous et la mer, pas de rang\u00e9e de b\u00e2timents, rien. Vous \u00eates assis sur l'eau, ou suffisamment pr\u00e8s pour que cela ne fasse aucune diff\u00e9rence. Nous sommes arriv\u00e9s juste avant le coucher du soleil et avons regard\u00e9 la lumi\u00e8re devenir douce sur la baie tandis que les premiers cocktails arrivaient.<\/p>\n

L'espace fonctionne comme deux choses \u00e0 la fois. D'un c\u00f4t\u00e9 se trouve le restaurant proprement dit, ouvert de 18h \u00e0 minuit. De l'autre c\u00f4t\u00e9 se trouve un bar \u00e0 cocktails qui fonctionne de 17h \u00e0 1h du matin, avec une liste de champagne s\u00e9rieuse et une musique qui reste \u00e0 un niveau de conversation. Vous pourriez venir pour un d\u00eener complet ou simplement vous arr\u00eater pour un verre apr\u00e8s une promenade dans la vieille ville. Les deux fonctionnent.<\/p>\n

Lo que comimos<\/h2>\n

Kena es cocina Nikkei, la fusi\u00f3n japonesa-peruana que surgi\u00f3 de la inmigraci\u00f3n japonesa a Per\u00fa hace m\u00e1s de un siglo. Si no la has probado, piensa en precisi\u00f3n japonesa con calor y acidez peruana. Pescado crudo, c\u00edtricos, aj\u00ed, soja. Cuando se hace bien es una de las cocinas m\u00e1s emocionantes del planeta, y aqu\u00ed se hace bien.<\/p>\n

El ceviche fue el favorito de la mesa, brillante y agudo y desaparecido en unos cuatro minutos. El plato que realmente detuvo la conversaci\u00f3n fue el cortaditos, una selecci\u00f3n de diferentes pescados cortados al estilo sashimi, cada uno aderezado de su propia manera. Impresionante fue la palabra que todos utilizaron. Los hand rolls, la firma del concepto Akiro del que surgi\u00f3 este restaurante, vinieron envueltos en nori crujiente y rellenos por encargo.<\/p>\n

Y dir\u00e9 algo que suena raro: pide el edamame. Lo s\u00e9, es edamame. Estos eran genuinamente muy buenos, y eso te dice algo sobre una cocina. Cuando la cosa m\u00e1s simple del men\u00fa recibe ese cuidado, el resto tiende a seguir.<\/p>\n

Comimos generosamente, somos seis, y salimos por no m\u00e1s de 80 euros por persona. Para cocina de este nivel, en esa terraza, en Marbella en julio, es un precio justo.<\/p>\n

Le chef derri\u00e8re tout cela<\/h2>\n

Kena est l'\u0153uvre de Luis Ar\u00e9valo, et son nom est la raison pour laquelle les attentes \u00e9taient \u00e9lev\u00e9es avant qu'un seul plat ne soit servi. N\u00e9 en Amazonie p\u00e9ruvienne, il a commenc\u00e9 dans un bar \u00e0 sushi de Lima en 1997, puis a construit sa carri\u00e8re \u00e0 Madrid avec le groupe Kabuki avant d'ouvrir une s\u00e9rie de ses propres restaurants. Il est largement reconnu comme le chef qui a apport\u00e9 la cuisine Nikkei en Espagne en premier lieu.<\/p>\n

Il y a une histoire ici aussi. Le Kena original a ouvert \u00e0 Madrid en f\u00e9vrier 2014, le premier grand pari personnel d'Ar\u00e9valo. Il a ferm\u00e9 quatre ans plus tard, et de son propre aveu, l'id\u00e9e de le ramener ne l'a jamais quitt\u00e9. Huit ans plus tard, cette terrasse sur le toit est le retour. Sachant cela, la soir\u00e9e a encore plus de sens. Ce n'est pas un h\u00f4tel qui engage un nom pour sa terrasse. C'est un chef qui ravive le projet qui lui importait le plus, au meilleur endroit qu'il pouvait trouver pour le faire.<\/p>\n

Kena est n\u00e9 d'Akiro, le premier bar \u00e0 rouleaux \u00e0 main Nikkei au monde, qui a d\u00e9j\u00e0 des emplacements \u00e0 Madrid, Barcelone, Chicago et Milan, avec Duba\u00ef et Zurich en route. Marbella est l'endroit o\u00f9 le concept s'\u00e9tend \u00e0 une soir\u00e9e compl\u00e8te: restaurant, cocktails, terrasse sur le toit, mer. C'est l'expression la plus compl\u00e8te de ce que fait Ar\u00e9valo, et il a choisi notre ville pour le faire.<\/p>\n

Voici comment je classerais Kena : occasions sp\u00e9ciales. Marbella a de nombreux bons d\u00eeners, mais tr\u00e8s peu d'endroits o\u00f9 le cadre c\u00e9l\u00e8bre la moiti\u00e9 pour vous. Anniversaires, anniversaires de mariage, un accord qui a finalement ferm\u00e9, la nuit o\u00f9 vous obtenez les cl\u00e9s de una nueva casa<\/a>.
